Consumer Perspectives Toward Food and Health: Research Findings and Market Opportunities
This session will reveal findings from the body of consumer research
conducted by IFIC and the IFIC Foundation over the past 10 years, with
focus on current attitudes and perceptions held by the American public
on key food safety, nutrition and health issues. Special emphasis will
be placed on new data from the nationally representative and benchmarked
studies, the Food & Health Survey and the Functional Foods/Foods for
Health Survey. Attend this session to learn about the eight “diet
disconnects” many consumers experience and messaging opportunities to
positively impact consumers’ food and lifestyle choices.
Speaker:
Wendy Reinhardt-Kapsak, R.D., is
director of health and nutrition at the International Food Information
Council (IFIC) and IFIC Foundation in Washington, D.C., where she
specializes in consumer and opinion leader communications on a variety
of food safety and nutrition issues. Her work includes conducting
consumer and health professional research, developing communication
workshops for opinion leaders, speaking at conferences and workshops,
and communicating with journalists and the media. She is a registered
dietitian and a member of several professional organizations, including
the American Dietetic Association, Institute of Food Technologists, and
the IDEA Health and Fitness Association. She is also a certified group
fitness instructor and maintains a private practice specializing in
weight management. Reinhardt-Kapsak received her bachelor’s degree in
nutrition and physical fitness from the University of Missouri,
Columbia, and received her master’s degree in nutrition and physical
activity from James Madison University, where her research endeavors
included nutrition and physical activity interventions related to
childhood obesity. She completed her dietetic internship at Yale-New
Haven Hospital in New Haven, Conn.
